This Agua Fresca recipe yields nutritious and refreshing drinks that are perfect for warm summer days! With natural ingredients like creamy avocados, zesty lime juice, juicy honeydew melon, fresh mint sprigs, and just a touch of matcha powder, you’ll be making this on repeat!

What is Agua Fresca?
Aguas Frescas originated in Mexico and Latin America. These drinks directly translate to “cool” or “fresh” water. They are a non-alcoholic drink typically made with fresh fruit, grains or cereals, flowers, seeds, and cold water.
You can make agua fresca recipes with almost any fruit by simply blending it with water, adding a little sweetener, and serving over ice cubes but some of my favorite common varieties include agua de horchata (which, perhaps surprisingly, is considered a type of agua fresca), agua de pepino y limón con chia (cucumber, lime, and chia) and agua de jamaica (hibiscus flowers).
Since moving to California, which boasts large Hispanic and Latino communities, I’ve had the opportunity to try many agua fresca varieties and can confirm they really are the best drink to beat the heat. I often find them at farmers’ markets or through street vendors and it’s one of my favorite ways to cool off. Best of all, they are generally quite easy and quick to prepare at home!
The best part is that this non-alcoholic beverage beats regular juice as it’s a much healthier option, gives you tons of choice and variety with different flavors, and is an easy recipe to scale to one drink or a large pitcher! Just give it a good stir and serve. Yum!
Why You’ll Love This Recipe
You can find agua frescas throughout Mexico, and South and Central America, and they are typically made with fruit, grains or cereals, flowers, seeds, and water. They are perfect for the summer heat and since moving to California, I’ve tried more varieties than ever and this is one of my faves.
A variety of fruits such as watermelon, cantaloupe, fresh pineapple, mango, or cucumber can be used, but today we’re making one with honeydew melon and… avocado! The resulting drink is hydrating and refreshing and a delicious way to beat the heat!
Agua fresca de aguacate is traditionally made with honeydew and lime juice, blended until you get a sweet, lightly creamy drink and of course I added just a tiny pinch of matcha for an even more gorgeous green color (but it’s completely optional)!

Is Agua Fresca Vegan?
Most agua frescas tend to be vegan-friendly and dairy-free, though milk is added to some agua frescas for additional flavour. Oftentimes, they are sweetened with sugar or agave syrup, so honey typically isn’t something to worry about.
Of course, this California Avocado Agua Fresca is 100% vegan and dairy-free, made with ripe, Fresh velvety California Avocados which add a bit of creaminess.
To sweeten, this recipe calls for honeydew for natural sweetening, but if you need to add sweetener I would suggest agave syrup as it is easily dissolved into the drink. You can also use granulated sugar or a simple syrup if you prefer but do make sure the sugar dissolves into the drink. Adjust the amount of sugar to taste.
How to Make This Agua Fresca Recipe
To make this irresistible agua fresca de aguacate, all you need to do is add your ingredients into a high-speed blender, blend until completely smooth, and add your sparkling mineral water. Serve over ice with garnish.
Ingredient Notes
Creamy, ripe, Fresh California Avocados add richness to this delicious drink. You’ll need avocado to blend, and you may want to reserve a few extra slices for garnish too!

We’re also using:
- Honeydew melon. I always look forward to summer honeydew melon! This provides the base sweetness for the drink and also pairs beautifully (color-wise) with the avocado and lime. It’s hydrating, refreshing, and nutrient-rich.
- Fresh lime juice. Zesty, bright, fresh lime juice helps to brighten the drink up. Reserve some lime slices for garnish and to add to the drink as well!
- Fresh mint. For garnish, but you can also tear up mint and let it infuse in the drink as well if you prefer a more intense flavor.
- Sparkling mineral water. Or you can use plain water, but sparkling is more fun if you ask me!
- Matcha powder. Optional, but I like to add just a touch, for vibrancy and color!
- Lots of ice. To serve over.
Step-by-Step Instructions
- Add your honeydew melon, California Avocado, lime juice, and matcha powder (if using) to a high-speed blender and blend until smooth. If desired, add additional honeydew melon or sweetener to adjust to taste. If you like mint, you can choose to blend some mint leaves in at this step as well.
- Strain your mixture through a fine-mesh strainer to ensure there are no chunks remaining, then combine water to serve.
- Serve over ice with slices of lime in the drink and fresh mint and a slice of lime to garnish. Enjoy immediately.

- There are so many variations of these drinks– feel free to get creative and use this recipe as a base. I recommend using whatever fruit and fresh herbs are in season, so if it’s summer use your favorite summer fruit like watermelon agua fresca, cucumber agua fresca, or a stone fruit if desired. As this drink contains avocado and sparkling mineral water, it’s best enjoyed immediately! You’ll also want to avoid the ice melting and diluting your drink. Because the drink contains a good amount of lime juice, you don’t have to worry too much about the avocado oxidizing.
If you’d like to prepare some of the components in advance, you can chop your honeydew melon and juice your limes.
