What is Mousse?

Mousse is a creamy and airy dessert that is achieved by whipping together various ingredients such as whipped cream, egg whites, and sugar. The result is a velvety-smooth and light-textured dessert that is enhanced by various mixins like chocolate, white chocolate, fruity flavors, and more.

Today, we’re making a Vegan Mousse that’s made without heavy cream, eggs, or refined sugar. Instead, it’s a lovely combination of vegan ingredients like vegan white chocolate and matcha tea powder and one surprising ingredient: Avocado!

What Makes This Recipe Great?

If you like dessert as much as I do, you’re going to love this creamy, dairy-free, and vegan white chocolate mousse. It takes almost no time to prep, requires zero cooking, and calls for only 3 ingredients. The vibrant green is a treat for the eyes, and you won’t believe how dreamy it is. 

Made with vegan white chocolate, Fresh California Avocados, and matcha powder, I can’t get enough of this Matcha Mousse dessert. June is California Avocado Month, so what better time than now to whip this up?

Ingredient Notes

  • Ripe, Fresh California Avocado. You’ll want ripe avocados for this recipe, soft to the touch, so your food processor will do a nice job blending smoothly.
  • Vegan White Chocolate. Use any dairy-free variety of white chocolate. I really like Enjoy Life’s vegan white chocolate, and Evolve carries a low-sugar, dairy-free white chocolate too! 
  • Matcha Green Tea Powder. Opt for ceremonial-grade matcha for the best colour, flavour, and nutrition. 

You can also add a few additional ingredients:

  • Vanilla Bean Paste. Or vanilla extract. It just adds extra warmth and depth to the dessert but isn’t necessary.
  • Maple Syrup. As needed. This will depend on your palate and the type of vegan white chocolate you use. Taste and adjust as you go. 
  • Fresh Mint. For garnish. 

Step-by-Step Instructions

  1. Remove the seed and carefully peel the avocado skin away. Add halved avocados to the food processor.
  2. Melt the white chocolate in a microwave-safe bowl in 15-second intervals, stirring in between. Add to the food processor along with the peeled avocados and matcha powder.
  3. Add the white chocolate to the food processor and then sift in your matcha powder. Blend until completely smooth. Taste and adjust by adding more matcha or maple syrup if desired. If using vanilla bean paste, add it to the blender at this stage as well.
  4. Once completely smooth, pour the mixture into small glass cups to serve. Dust with a thin layer of matcha powder on top and fresh mint to garnish, if desired.

Secrets to Success

  • I recommend using avocados that are ripe to the touch. They should be soft enough to be blended smoothly and will also yield the creamiest results for this dish!
  • If you prefer dark chocolate or milk chocolate to white chocolate, you can absolutely substitute. Just be aware that the green colour will likely not shine through. You may also need to adjust for sweetness, as white chocolate tends to be much sweeter than dark or milk chocolate. 
  • If you don’t have a food processor, you can also use a blender, hand mixer, or stand mixer with a whisk attachment to blend all of your ingredients. Keep in mind that you want this matcha mousse to be very smooth. 

Serving Tips

  • This dessert is best enjoyed immediately, so I recommend prepping just before serving. If desired, you can chill the mousse for about 30 minutes or so. The matcha powder will help to preserve the beautiful green avocado colour. 
  • If preparing in advance or chilling, dust with the matcha powder just before serving for the best presentation.

Storage Tips

  • I don’t recommend making this matcha mousse in much advance of eating it, as avocados are known to brown quite quickly. You can make it in advance for up to 30 minutes before, but not much longer than that.

Ingredients 

  • 2 ripe Fresh California Avocados seeded and peeled
  • 70 grams Vegan White Chocolate
  • 2-4 tsp Ceremonial Grade Matcha Powder to taste
  • 1 tsp Vanilla Bean Paste
  • Maple Syrup sweeten as needed (optional)
  • Fresh Mint to garnish (optional)

Instructions
