Creamy White Bean Soup
Equipment
- medium pot
- high speed blender
Ingredients
- 2 tbsp olive oil or neutral oil
- 1 yellow onion diced
- 2 carrots peeled and dicedd
- 2 ribs celery diced
- 5 cloves garlic minced
- 1 tsp kosher salt more to taste
- 1 tsp fresh thyme
- 1/2 tsp smoked paprika
- 1/2 tsp red chili flakes
- 4 cups vegetable broth
- black pepper
- 2 15 oz cans white beans drained and rinsed
Instructions
- In a pot, add olive oil and once hot, sauté carrots and onions for 2-3 minutes. Add onion and salt and sauté another 2 minutes or so.
- Add garlic, thyme, smoked paprika, beans and red chili flakes. Sauté for 2 minutes then add vegetable broth and bring the mixture to a boil and then lower to a simmer for 15 minutes, covered.
- Transfer the mixture to a blender or use an immersion blender and blend until smooth. If you prefer a thicker soup, add more vegetable broth and blend until desired consistency is achieved. Season with salt, as needed, and black pepper.
