Creamy White Bean Soup

Servings: 4 servings

Equipment

  • medium pot
  • high speed blender

Ingredients 

  • 2 tbsp olive oil or neutral oil
  • 1 yellow onion diced
  • 2 carrots peeled and dicedd
  • 2 ribs celery diced
  • 5 cloves garlic minced
  • 1 tsp kosher salt more to taste
  • 1 tsp fresh thyme
  • 1/2 tsp smoked paprika
  • 1/2 tsp red chili flakes
  • 4 cups vegetable broth
  • black pepper
  • 2 15 oz cans white beans drained and rinsed

Instructions 

  • In a pot, add olive oil and once hot, sauté carrots and onions for 2-3 minutes. Add onion and salt and sauté another 2 minutes or so.
  • Add garlic, thyme, smoked paprika, beans and red chili flakes. Sauté for 2 minutes then add vegetable broth and bring the mixture to a boil and then lower to a simmer for 15 minutes, covered.
  • Transfer the mixture to a blender or use an immersion blender and blend until smooth. If you prefer a thicker soup, add more vegetable broth and blend until desired consistency is achieved. Season with salt, as needed, and black pepper.
