A healthy shamrock shake that’s vegan and high protein with avocado, banana, fresh mint, and no food dye! Great for breakfast or post workout.
- 1/2 ripe avocado, frozen*
- 1 frozen ripe banana, optional
- 1/2 cup frozen chopped spinach
- handful fresh mint leaves to taste or 1/4 tsp mint extract
- 1/2 tsp vanilla extract or vanilla bean paste
- plant milk to blend
- 1–2 medjool dates (*to sweeten, if using just avocado)
- 1 serving vanilla plant protein
- pinch of spirulina or matcha, for colour
- Add all ingredients to a blender and blend until completely smooth, adjusting plant milk to achieve desired texture. Enjoy immediately!
