Make Baked Garlic Scape Fries for a fun crispy snack with gluten-free bread crumbs and savory seasonings. This is a summery vegan snack or appetizer that’s perfect for dipping.
I love experimenting with interesting seasonal produce. Especially during the summer when there’s such a bounty at the farmer’s market. Garlic scapes are one of my favorite buys.
Not only are they absolutely delicious with a mild, garlicky flavor, but they’re also stunning. These curly green stalks make an elegant garnish on a salad, can be whipped into a creamy pesto, and now baked into crispy fries.
These garlic scape fries are my new favorite way to make the most of the short season of garlic scapes. And you can bet I’ll be eating them until there are no more scapes to be had!
How to Make Garlic Scape Fries
I’m calling these fries because they’re crispy and fry-shaped, but there’s no frying involved in this recipe. Instead, the garlic scapes are lightly breaded and baked. They come out golden, crispy and crunchy and perfect for dunking into your favorite sauces.
Here’s what you need to make the fries.
- Garlic scapes. These are the wispy green stalks that grow out of the top of a garlic root. They’re harvested early in the summer and only once a year, so they’re precious and so delicious.
- Oil. You can use spray oil if you like. For a richer flavor, I like to thin out a bit of tahini with water to coat the garlic scapes.
- Bread crumbs. This is your breading for the fries. It’s best to use very finely crushed bread crumbs to coat the delicate scapes.
- Garlic and onion powder. Because it’s never a bad idea to add allium seasoning to your alliums!
- Smoked paprika. I like adding this for a touch of heat that’s not overwhelming.
If you want to mix up the spices in your breading, go ahead! These fries would be great with:
- Dried herbs like oregano, basil and chives
- Spices like chili powder or cayenne
- Blends like Italian seasoning, everything bagel seasoning or taco seasoning
- Nutritional yeast
Air-Fried Garlic Scapes
You can make this recipe in a regular oven or in an air fryer. They cook up faster in an air fryer, in about 8 minutes. To make sure they get crispy all over, toss the garlic scapes halfway through baking.

Every good fry needs a dipping sauce. And these vegan garlic fries are no exception.
You can go with the classic marinara sauce or ketchup, but I like to switch things up with some of these fun sauces:

Baked Garlic Scape "Fries" (vegan, gluten free, nut free)
- 5-6 garlic scapes
- neutral oil/spray oil or 2 tbsp tahini + 1-2 tbsp warm water
- 1/2 cup gluten free bread crumbs or finely crushed
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- pinch of salt
- If baking, preheat your oven to 375F degrees and line a baking sheet with a nonstick baking mat or parchment paper.
- Quarter your garlic scapes to cut into "fry" shapes.
- Prepare your breadcrumb batter by mixing together breadcrumbs and spices.
- Toss garlic scapes with a touch of oil to coat, or tahini with warm water to thin. Transfer your coated scape fries into your breadcrumb mixture. You can gently press the breading to make sure it sticks.
- Transfer to your baking sheet and bake for 15 minutes, flipping scapes or turning the tray halfway through until golden brown. If airfrying, fry at 370F for 7-8 minutes.
