As I’m sharing these 5 Healthy Vegan Soups with you, it’s a brisk 35F degrees outside–ideal soup weather if you ask me! Whether it’s winter, or just a night that calls for a cozy bowl of soup, I’ve got you with 5 different varieties. Each of them made with simple, wholesome ingredients and prepared in 30 minutes or less.
I’ve included heartier soups, high protein soups and light soups so there’s something for everyone and every kind of food mood. If this is your first rodeo with a fully vegan soup, don’t worry at all–these recipes are packed full of flavour.

To sauté without oil, you can use splashes of veggie broth, adding more as needed to make sure nothing sticks/burns. Alternatively, feel free to use oil to sauté as you normally would.
For the majority of these recipes, all you need is a stovetop pot and a blender. If you don’t have a blender, no worries! You can use an immersion blender and the results will be just as delicious. If you have an instant pot, you can also play around with using that for each of these soups–usually, it just helps to cook down veggies more quickly and unleash the flavour.
The majority of these soups can be frozen, if you end up with leftovers or would like to meal-prep. I recommend storing noodles separately from the soup if making the Tofu Chicken Noodle Soup, but otherwise, freeze away!
