This Broccoli Caesar Salad recipe features a mix of raw broccoli and romaine lettuce tossed in a homemade vegan Caesar dressing. Full of flavor and crunch, this salad is as refreshing and delicious as they come!

I’ve got another delicious summer salad for you that pairs perfectly with any pasta dish or, with some added plant-based protein, can be the main course itself! Enter, Broccoli Caesar Salad with Homemade Caesar Dressing! This recipe is a fun twist on a classic Caesar salad made completely vegan!
It uses a handful of super simple ingredients and takes just 20 minutes to make. Customize it to your liking by adding some additional vegan protein, or enjoy it as a side to your favorite pasta, like my Vegan Lemon Pepper Pasta or Vegan Cacio e Pepe!

- large head of broccoli: Chopped into bite-size pieces and the thick stems thinly sliced.
- hearts of romaine lettuce
- sprouts or other green of choice: I used pea shoots.
- batch vegan Caesar salad dressing
- fresh lemons
- vegan parmesan cheese: Homemade or storebought, to garnish.
Vegan Caesar Dressing
- heaping tablespoons tahini
- water: Adjust to suit how thick or thin you like your dressing.
- nutritional yeast
- lemon juice: Add a little lemon zest as well for brighter flavor.
- garlic cloves or garlic powder
- Dijon mustard
- white miso paste, optional
- a big pinch of salt and black pepper to taste: You can use kosher salt, sea salt, or table salt– whatever you prefer. Freshly cracked pepper is a great option as well.
Step-by-Step Instructions
- First, prepare a large bowl, and fill it with cold water and a handful of ice cubes. Place clean and prepared raw broccoli florets and broccoli stems into the bowl and submerge. Let’s sit while you prepare the Caesar dressing.
- Prepare romaine hearts by slicing them into bite-sized pieces and tossing them into a large mixing bowl. Drain and pat dry broccoli, and add to the romaine bowl.
- In a separate small bowl, combine all the dressing ingredients and whisk together until smooth, adding additional water if you’d like to thin out, and any additional seasoning to taste.
- Add dressing, and using your hands, massage the dressing into the salad. Toss in sprouts or other delicate green of choice and gently toss again to coat.
- To serve, grate or sprinkle a generous amount of vegan parmesan on top of the dressed broccoli Caesar salad, extra fresh cracked black pepper, and a side of fresh lemon wedges. Drizzle additional dressing if desired.
Serving & Storage Tips
If tossed in dressing, this salad is best served immediately, but if you have leftovers I recommend eating them within 24 hours. Store in an airtight container in the refrigerator.
To meal prep this salad, make the salad and dressing and store them separately until ready to combine. Serve as a side dish to your favorite pasta or add in some garbanzo beans or plant-based protein to make it a main dish.
