I used to love Spaghetti-O’s as a kid. And sometimes I is the simple joy of such a playful meal. Of course, classic canned Spaghetti-O’s are far from gluten-free or made with fresh ingredients. So I decided to make my own grown-up version that’s gluten-free, vegan and only made with two simple ingredients. If you want to bring back some of the nostalgia of childhood without eating from a can, here’s what you need to know!

How to Make Homemade Spaghetti-O’s

There are only two simple ingredients in this recipe! The key is to find gluten-free and vegan O-shaped pasta. I use these anellini noodles made from corn flour, which are available on Amazon.  

The only other ingredient you need is your favorite jarred or homemade marinara sauce. 

The fun part with this recipe comes with the toppings. 

Topping Ideas for Spaghetti-Os

I like to add some extra flavor and texture to my bowl of spaghetti-O’s with toppings like:

  • Chili flakes for spice
  • Minced garlic for added flavor complexity
  • Olive oil to add some nice richness to the meal. 
  • Basil for that classic Italian flavor
  • Hazelnut or brazil nuts for crunch

How to Serve Vegan Spaghetti-O’s

Make a meal of your Spaghetti-O’s with a side of vegan grilled cheese, Vegan Buffalo Chicken, or Tempeh Tenders + Sweet Potato Fries.

Making O-Shaped Pasta

If you can’t find anellini noodles, you can make your own o-shaped pasta! Simply cook gluten-free rigatoni to al dente. Then use a sharp knife to cut the cooked noodles into little O’s!

Homemade Spaghetti-O’s (vegan, gluten free)

Description

These fun and adorable homemade Spaghetti-O’s ar a grown-up version of the childhood classic, made gluten-free and vegan!


Ingredients

optional

  • 12 tsp chili flakes
  • 1 tsp minced garlic
  • 1 tbsp olive oil
  • fresh basil
  • hazelnut, or brazil nut
  • black pepper

Instructions

  1. Begin by preparing your gluten free o’s according to package directions. Drain and set aside.
  2. [Optional step] Heat chili flakes and garlic  in 1 tbsp olive oil until nice and aromatic. Add your cooked pasta, toss to coat.
  3. Add your marinara sauce, to taste and toss to coat evenly.
  4. Plate, and finish with fresh basil, fresh cracked black pepper and grated hazelnut or brazil nut, to taste.

Notes

*If you are not able to find a gluten free O shaped pasta, opt for a gluten free penne or rigatoni. Cook al dente, then carefully cut O shapes out of your tubular pasta. This is a far more tedious process but is an alternative if you would prefer not to purchase gluten free O’s.
