What Makes This Recipe Great
I used to love SpaghettiOs as a kid. And sometimes, it is the simple joy of such a playful meal. Of course, classic canned SpaghettiOs are far from gluten-free and not made with fresh ingredients.
So I decided to make my own grown-up version that’s gluten-free, vegan, and only made with two simple ingredients. That means there’s no high fructose corn syrup, no preservatives, and no other artificial junk from the can!
If you want to bring back some of the nostalgia of childhood without eating from a can, here’s what you need to know!
Ingredient Notes
There are only two simple ingredients in this recipe!
- Anellini Pasta: The key is to find gluten-free and vegan O-shaped pasta. I use these anellini noodles made from corn flour, which are available on Amazon.
- Tomato Sauce: The only other ingredient you need is your favorite jarred or homemade marinara sauce. The fun part with this recipe comes with the toppings!
Topping Ideas
I like to add some extra flavor and texture to my bowl of spaghettiOs with toppings like:
- Red pepper flakes or Chili flakes for spice
- Minced garlic for added flavor complexity
- Olive oil adds some nice richness to the meal.
- Basil for that classic Italian flavor
- Hazelnut or Brazil nuts for crunch
- Salt and pepper to taste
- Vegan parmesan cheese or nutritional yeast for cheesy flavor and added creaminess
- Vegan meatballs for added protein
Step-by-Step Instructions
- Bring a large pot of water to boil. Begin by preparing your gluten-free o’s according to package directions. Drain and set aside.
- [Optional step] Heat chili flakes and garlic in 1 tbsp olive oil over medium heat until nice and aromatic. Add your cooked pasta and toss to coat.
- Add your marinara sauce to taste and stir to coat evenly.
- Plate and finish with fresh basil, fresh cracked black pepper, and grated hazelnut or brazil nut to taste.
Secrets to Success
- If you can’t find anellini noodles, you can make your own o-shaped pasta! Simply cook gluten-free rigatoni to al dente. Then, use a sharp knife to cut the cooked noodles into little O’s!
Serving Tips
- Make a meal of your SpaghettiOs with a side of vegan grilled cheese, Vegan Buffalo Chicken, or Tempeh Tenders + Sweet Potato Fries.
Storage Tips
- Store leftover homemade spaghettiOs in an airtight container in the fridge for up to 5 days. Reheat and serve with desired toppings.
Recipe FAQs
It’s pretty simple! All you need is o-shaped pasta (anellini) or another small pasta shape (pastina can work too, but won’t be “Os”) and your favorite marinara sauce. You can make your own marinara sauce with tomato paste, tomato sauce, veggies like onion and garlic, and spices like onion powder, garlic powder, and oregano. Or use a storebought version.
