This cold tofu is one of my favourite things to make when I want something nourishing, satisfying, and on the table in minutes — with zero cooking involved. Silky soft tofu gets sliced into bite-sized pieces and draped in a savoury-sweet sauce of tamari, maple, and toasted sesame oil, finished with freshly grated garlic, green onion, sesame seeds, and a pinch of chili flakes. Light yet deeply flavourful, it’s perfect as a side dish, a light lunch, or a straight-from-the-fridge snack.

Why You’ll Love This Cold Tofu Recipe

  • Zero cooking — genuinely ready in 10 minutes, start to finish.
  • Silky, cooling, and refreshing — exactly what I crave on warm days or after a workout.
  • Simple pantry staples that turn into something tasting way more special than the effort.
  • Naturally vegan and gluten-free (just use tamari!), with a good hit of plant-based protein from the tofu.

Ingredient Notes

  • Silken tofu: The star of the show — soft, custardy, and delicate. Use silken or soft tofu here, not firm, for that classic melt-in-your-mouth texture. Handle it gently when slicing!
  • Tamari: Adds deep savoury flavour and keeps the recipe gluten-free. Regular soy sauce works too if gluten isn’t a concern.
  • Maple syrup: Just a touch to balance the saltiness of the tamari.
  • Sesame oil: Toasted sesame oil brings nutty richness — a little goes a long way.
  • Garlic: Freshly grated so it melts right into the sauce.
  • Green onion: Adds freshness, colour, and a mild oniony bite.
  • Sesame seeds & chili flakes: Mixed right into the sauce for a little crunch and heat. Adjust both to taste.

How to Make Cold Tofu (No Cook)

Step 1: Transfer the tofu to a shallow dish or bowl and gently slice it into bite-sized pieces, keeping them as intact as you can.

Step 2: In a small bowl, whisk together the tamari, maple syrup, sesame oil, grated garlic, green onion, sesame seeds, and chili flakes until smooth. Pour the whole mixture over the tofu.

Secrets to Success

  • Use silken or soft tofu — firm or extra-firm tofu won’t give you that silky, custardy texture that makes this dish.
  • Drain off any excess liquid from the tofu package before slicing.
  • Grate the garlic finely (a microplane is perfect) so it blends into the sauce instead of giving you harsh raw bites.
  • If you have 5–10 minutes, let the tofu sit in the sauce before serving — it soaks up so much flavour.

Storage Tips

This is best enjoyed fresh, but leftovers keep in an airtight container in the fridge for up to 2 days. The texture is at its silkiest on day one.

Recipe FAQs

Can I use firm tofu instead of silken?

You can, but the texture will be quite different. Silken or soft tofu gives that classic delicate, custardy bite this dish is all about.

Is this recipe gluten-free?

Yes — as long as you use tamari, which is typically gluten-free, rather than regular soy sauce.

Can I make it ahead of time?

Yes! Assemble it, cover, and refrigerate for a few hours. The tofu will absorb even more flavour as it sits.
