Now this is a totally optional ingredient, but it adds both flavor and the perfect pick-me-up (it has a little caffeine!). This recipe is super flexible, and while I made mine vegan (of course) you can always swap the vegan white chocolate for vegan dark chocolate or milk chocolate chips depending on your preferences. The nut butter is also a choose-your-own-adventure– make this chocolate peanut butter banana bark, or use almond, cashew, or sunflower seed butter instead.

- ripe bananas: Layers of banana slices at the bottom of this bark add sweetness and nutrition to this delicious treat.
- creamy nut butter: Any nut butter will work here! Almond butter, cashew butter, or creamy peanut butter. If you use natural peanut butter, I recommend using a “no-stir” option. If you’re looking for a nut-free option, use sunflower seed butter.
- vegan white chocolate: You could also make this with vegan dark chocolate chips if preferred.
- ceremonial-grade matcha powder (optional): As you know, I’m matcha-obsessed. You can omit this if preferred, but I think it adds amazing flavor!
- flaky sea salt: A little flaky salt adds the finishing touches!

Step-by-Step Instructions
Step 1: Line a baking sheet pan with parchment paper or a nonstick baking mat.

Step 2: Slice bananas into 1-inch coins and spread evenly onto the baking mat, forming a tight rectangle.

Step 3: Spread your nut butter of choice all over the sliced bananas.
Step 4: Melt down vegan white chocolate in 30-second increments in the microwave, stirring in between, until fully melted. Sift in matcha powder and stir to combine (optional).
Step 5: Drizzle the melted chocolate over the peanut butter layer (or other nut butter), using a spatula to smooth and spread into an even layer. Sprinkle with salt if using.
Step 6: Transfer the baking sheet to the freezer and let it chill for 1 hour or until it is firm to the touch. To enjoy, break up the bark with your hands to create bite-sized pieces.

Storage Tips
