Inspired by all of the natural ingredients in a Ferrero Rocher, these splendid bliss balls are loaded with cacao flavour, rich nutty flavour, a fun crunchy center and the perfect amount of natural sweetness (derived from fruit!). To make, all you need to do is toss ingredients into a food processor and then roll into balls. No baking, or tempering chocolate required!

So what’s in these Ferrero Rocher Bliss Balls?

secrets to success

For best results, I recommend using a food processor, however a high speed blender can also be used. If you have a smaller unit, it will be easier to work with, as most larger blender units tend to have trouble blending small amounts of ingredients.

If you find the texture to be too sticky, go ahead and add more dry ingredient of choice to the mix (e.g. oats or either nut). On the other hand, if you find the mixture to be too dry, you can add a touch of nut butter or even a tsp of hot water to help the mixture along.

I strongly recommend using medjool dates, as they are a soft, squishy variety and blend much more evenly. They are also larger in size, so if you are substituting medjool dates with another variety, please account for that by adding less or more as needed. You can also soak your medjool dates in hot water for 10 minutes prior to making this recipe to help them blend more smoothly.

A delicious and nostalgic treat, in bliss ball form! These Ferrero Rocher Bliss Balls are healthy, vegan, gluten free, refined sugar free and oil free.

Ingredients

  • 1/2 cup roasted hazelnuts
  • 1/4 cup almonds
  • 1/4 cup rolled oats
  • 8 large medjool dates pitted
  • 2 tbsp almond butter
  • 2-3 tsp cacao powder
  • 1 tsp vanilla extract
  • pinch of salt
  • extra hazelnuts for the center exclude from food processor

Instructions

  • In a food processor, pulse hazelnuts almonds and oats until broken down into a mealy texture. Be careful not to blend all the way, otherwise the mixture will start to turn into a butter.
  • Next add dates, almond butter, cacao powder, vanilla and a pinch of salt and process until a dough-like texture begins to form. The mixture should hold together enough that you're able to form it into shapes.
  • Take 1-2 tablespoons of mixture and press one roasted hazelnut into the center. Roll into a ball and pack tightly to form your bliss ball. Repeat until all of the mixture has been rolled.

  1. These sound incredible! Any recommendations on what I could replace the oats with? Unfortunately I’m celiac and have a reaction to oats along with wheat.
