Lychee Tonic Matcha

Ingredients
Lychee Simple Syrup
- 12 oz lychees peeled and pitted
- 1 cup cane sugar
- 1 cup filtered water
Matcha Tonic
- 4-6 oz tonic water
- 1.5 tsp ceremonial grade matcha powder
- 1/4 cup hot water
Instructions
Prepare Lychee Syrup
- In a saucepan over medium heat, add lychees, sugar and water. Stir until all of the sugar is dissolved into the water and use a spatula to crush and break down lychees. Drop the heat to low and simmer for about 5 minutes. Remove from the heat and allow to sit so the lychees can infuse, ideally 30 minutes. When ready to use, strain to remove lychees and store in an airtight container in the refrigerator.
Assemble the Drink
- Add a generous amount of ice to a glass. Add 2 oz lychee syrup (or as much as desired) and top off with tonic water.
- In a matcha bowl, sift and whisk the matcha powder with hot water, whisking in an M shape with a bamboo matcha whisk for about 30 seconds. Once a nice layer of froth has formed and no clumps remain, pour over top of the tonic. Stir and enjoy.
