Hi friends! I wanted to share with you the recipe video I made with Whole Foods Market and Kite Hill!

I am so excited about this collaboration because Whole Foods is undoubtedly my go to spot for groceries. First, the variety of produce available is amazing and everything is always fresh and flavourful. Aside from just fresh produce, Whole Foods also stocks amazing vegan alternatives, like Kite Hill products for example. Don’t even get me started on vegan snacks you can get there because the options are endless… I know when I travel that I can always rely on Whole Foods to have an option for me, and any specialty items as a vegan, I can almost always find at Whole Foods. If I’m in a pinch, I usually eat at the hot bar or take one of their to go boxes because there are ALWAYS vegan options available, and you can always customize your own salad too.

Not back to the recipe–it’s a cheesy herbed mushroom toast and a great savoury snack or breakfast dish. It comes together so easily and the combination of the mushrooms and cheese is one of my absolute favourites. Here’s the recipe:
1 cup mushrooms / 1/3 onion / 2 cloves garlic / few sprigs of thyme / few sage leaves / veggie broth or olive oil / salt and pepper / Kite Hill cheese (either ricotta or plain) / bread

Cook onion and garlic with a little olive oil or veggie broth until golden and fragrant. Add mushrooms and veggie broth as needed, next add herbs. Top toasted bread with kite hill cheese and mushroom mixture. Season to taste.
