Ingredients

  • 3 cups diced pineapple fresh or frozen
  • 4 oz coconut cream
  • 1/4-1/2 cup coconut water as needed, to blend
  • 1 1/2 cups ice
  • 2 limes juiced
  • 1 tbsp lime zest

Instructions

  • In a high speed blender, add pineapple, coconut cream, coconut water, ice and lime juice. Blend and use a tamper to break down the ice until a nice slushy texture is achieved. Add more coconut water as necessary.
  • To serve, garnish with fresh lime zest and optional wedge of fresh pineapple.
  • If needed, you can also add additional sweetness with a touch of maple syrup if you'd like.

Notes

  • Sweetness Adjustment: If your pineapple isn't super ripe, add a touch of maple syrup or simple syrup to taste.
  • Non-Alcoholic Rum Option: Want the traditional pina colada flavor without alcohol? Add a splash of non-alcoholic "rum" like Ritual Zero Proof for a realistic twist.
  • Presentation Tip: Serve your mocktail over extra crushed ice with a maraschino cherry on top - it's a beautiful, delicious addition!
  • Chill Your Glasses: For an extra frosty experience, pop your serving glasses into the freezer for 10–15 minutes before pouring your mocktail.
  • Pre-Slice Garnishes: Prep pineapple wedges and cocktail umbrellas in advance to make assembling drinks at a party effortless and festive.
  • Use Crushed Ice: Blending with crushed ice instead of large cubes helps achieve a smoother, silkier texture quicker.
  • Layer Flavors: Add a few drops of coconut extract for even deeper tropical flavor if you want to intensify the coconut notes naturally.
  • Texture: For the best texture, use a good blender or even a food processor if necessary to get a perfect consistency.
