Easy Strawberry Overnight Oats Recipe

If you want an easy breakfast that tastes like dessert, these strawberry overnight oats are for you! They’re made with simple ingredients and combine the natural sweetness of fresh strawberries, the creaminess of plant-based milk, and a matcha magic shell. Prep these the night before and the next morning you have a delicious, nutrient packed breakfast to start your day.

Ingredients

  • 1 scoop plant protein of choice
  • 1/4 cup fresh strawberries
  • 1 1/2 cups plant milk
  • 2 tsp maple syrup
  • 1/2 tsp vanilla bean paste
  • 1/4 tsp salt
  • 1/2 cup Nature's Path Organic rolled oats
  • 2 tbsp freeze dried strawberries
  • 1 tbsp chia seeds

Matcha Magic Shell

  • 1/4 cup dairy free white chocolate
  • 1 tsp Frauth matcha powder

Instructions

  • Blend plant protein, strawberries, plant milk, maple syrup, vanilla bean paste and salt until smooth. Add to a bowl with with rolled oats, freeze dried strawberries and chia seeds and stir to incorporate. Transfer into a jar and allow to set for 2 hours or overnight.
  • When ready to serve, melt dairy free white chocolate, sift in matcha powder and stir to combine. Pour on top of oats and return to the fridge until chocolate is set, then crack and enjoy!

Notes

  • Use non-dairy milk like cashew milk or oat milk for a creamier texture!
  • Adjust the amount of maple syrup or swap for strawberry jam if you prefer a fruitier taste.
  • If your oats are too runny, reduce the milk slightly or add an extra teaspoon of chia seeds to help thicken them. Letting them sit longer can also improve the texture.
  • If you prefer a super smooth consistency, blend all the ingredients before refrigerating.
  • For a layered effect, alternate between the oat mixture and additional fresh fruit or plain Greek yogurt when assembling.
  • Feel free to experiment with different fruits, such as blueberries or peaches, and adjust the sweeteners to create your favourite flavour combinations.
