Equipment

  • 1 cocktail shaker

Ingredients

  • 4 oz fresh persimmon juice about 2 large persimmons for me
  • 1/2 oz lime juice fresh
  • 1 1/2 oz non-alcoholic vodka alternative
  • 1 oz simple syrup
  • 2 tbsp aquafaba
  • Handful of ice cubes
  • 2-3 dashes bitters non-alcoholic

Instructions

  • In a cocktail shaker, add persimmon juice, lime juice, non-alcoholic vodka, simple syrup, aquafaba and ice cubes. Shake vigorously for 10-15 seconds.
  • To serve, strain and pour into a chilled glass. Top off with bitters, to taste.

Notes

  • Shake it like you mean it! Vigorous shaking is key to creating that creamy foam layer from the aquafaba. Don’t be afraid to go all out!
  • Use chilled ingredients and glasses to keep the mocktail crisp and refreshing.
  • Blend ripe persimmons and strain the juice for the smoothest texture. If the juice is too thick, add a splash of water to thin it out.
  • Taste before serving, and tweak the syrup or citrus to suit your preference.
