Healthy Strawberry Bliss Balls Recipe
These strawberry bliss balls (or energy balls) are the perfect healthy snack - naturally sweet, oil-free, and packed with real strawberry flavour! - 10-12 pitted medjool dates
- 1 cup raw cashews
- 1/2 - 3/4 cup freeze dried strawberries (add more or less for flavour intensity of your choice)
- 1/4 cup rolled oats
- 1/2 vanilla bean or 1/2 tsp vanilla extract
- 2 tbsp raw cashew butter or nut butter of choice
Optional
- micro mint, basil or thyme leaves for garnish
Add all ingredients, except for garnish into a food processor and pulse until a dough begins to form and mixture pulls away from the sides of the unit. If the mixture feels dry, add additional nut butter, and if the mixture feels too wet, add additional oats.
Form the dough into tablespoon sized balls, or form into strawberry shapes and garnish.
- Depending on the weather and the softness of your dates, you might need to tweak the mixture. If it's too sticky, add more oats, if too dry, a bit more nut butter should do the trick.
- Using damp hands can make rolling the mixture into balls easier and less sticky.
- Don’t shy away from adding fresh herbs as garnish. They not only look cute but also add a refreshing contrast to the sweetness!
- If you love the combination of berries and chocolate, you can easily turn these into chocolate strawberry bliss balls by adding a tablespoon of cacao powder to the mixture or rolling the finished balls in melted dark chocolate.
