Ingredients

  • 1 avocado sliced
  • 1 tsp powdered garlic
  • 2 tbsp tahini + 2 tbsp water more as needed
  • 1/2 cup gluten-free bread crumbs I used this chickpea based breadcrumb
  • 1/2 tsp onion powder
  • 1/2 tbsp cajun seasoning or seasoning mix of choice*
  • 1-2 tsp salt

Instructions

  • Preheat your oven to 350F while you prep your ingredients.
  • Prepare your batter by mixing 1/2 tsp powdered garlic, tahini, water, and seasoning of choice. Mix until a smooth batter forms, adding additional water as needed.
  • In another bowl, mix together remaining 1/2 tsp powdered garlic, onion powder, cajun seasoning or seasoning of choice and salt.
  • Coat avocado slices in tahini mix, then coat in breadcrumb + seasoning mixture.
  • Bake on a nonstick baking sheet or parchment paper for about 15-20 minutes, or until golden brown and crisp.
  • Serve with hummus, salsa, dip of choice!

Notes

  • Some great seasoning mixes: Italian seasoning, pizza seasoning, poultry seasoning, taco seasoning, everything bagel seasoning.
  • If you’d like to bake these with a little drizzle of olive oil or avocado oil feel free to, but if you’d like to keep them oil free, I recommend a good nonstick baking sheet, or parchment paper.
  • Make sure you season both the “batter” and the “crumb” topping, in order to pack in the flavour.
  • I used gluten-free bread crumbs, (actually, I used this chickpea-based crumb), but if you aren’t allergic, feel free to use regular bread crumbs, you lucky duck!
  • Opt for ripe avocados that are firm but not too soft. Overripe avocados can be too mushy and may not hold their shape during coating and baking.
