Homemade Silver Pin Noodles Recipe

These simple, silver pin noodles are made with 5 simple ingredients and are incredibly versatile. A gluten-free and vegan noodle recipe that goes perfectly with salads, soups, and stir-fries. 

Ingredients

  • 1/2 cup rice flour more for dusting
  • 1/4 cup cornstarch
  • 1/8 cup tapioca flour
  • 1/2 cup water boiling
  • 1/2 tsp salt

Instructions

  • Whisk together rice flour, cornstarch, tapioca flour and salt in a heat safe mixing bowl.
  • Bring 1 cup of water to a rolling boil on the stove, then pour out 1/2 cup of water into a measuring cup.
  • Add the boiling water into the flour mixture and stir with a spatula to combine and form a dough. Let the dough mixture sit to hydrate and cool down for about 5 minutes.
  • Flour a working surface with rice flour and coat your hands, then take 1/4 - 1/2 tsp of dough and roll tightly between your palms. This should create a snake-like shape, with tapered ends. Repeat with remaining dough.
  • Transfer prepared noodles onto a rice floured baking sheet so they don’t stick.
  • To cook, bring a pot of water to a boil then add the noodles. Use a strainer to remove the noodles and transfer to a bowl of cool water immediately. Drain and then pair with your favourite sauce or add to soup.

  • These silver needle noodles go well with your favorite sauces and stir-fried vegetables like carrots, broccoli, onions, shiitake mushrooms, and plant-based protein like tofu. Use gluten-free soy sauce and green onions for garnish and enjoy!

Storage Tips

Store any leftover noodles in an airtight container or resealable plastic bag. Store them in the pantry. While silver pin noodles do not require refrigeration, storing them in the refrigerator can help maintain their freshness for a longer period, especially in humid environments.
To freeze, place them in a freezer-safe container or bag, remove as much air as possible, and store them in the freezer for up to 2 months. Cook the noodles directly from frozen, just add a few extra minutes to the cooking time.
