Add hibiscus petals to a jar and pour hot water over it. Let steep for 10-15 minutes, until the liquid is a dark pink colour. Strain and squeeze excess moisture out of the petals. Set aside.
In a cocktail shaker, add hibiscus infusion, lime juice, non-alcoholic vodka, simple syrup, aquafaba and ice cubes. Shake vigorously for 10-15 seconds.
To serve, strain and pour into a chilled glass. Top off with bitters, to taste.
