Hi friends! Sharing a quick and easy Spicy Almond Butter Noodle recipe that comes together in about 10 minutes or less. In the spirit of quick and easy, I’ll keep this short and sweet for ya.

If almond butter sounds like a unique ingredient to use, rest assured–it’s basically a riff off of a peanut butter sauce, which is a common savoury flavour in a lot of Asian cooking. In total, we’re using 7 ingredients to make this sauce and all you really need to do is whisk together, and mix in with your cooked noodles. If you’d like to add toasted sesame oil, you can for additional flavour, but trust me when I say the recipe is divine even without! Oh, also, if spicy isn’t your thing, that’s also optional 🙂

For the noodles, I used these flat rice noodles, commonly used to make pad thai, but if you’re not gluten-free or have a preferred noodle, the good news is this sauce will work no matter what the noodle. You can also top a stir fry with this sauce, or really whatever else you’d like! I also encourage you to throw in additional veggies you have on hand, or a plant protein like tempeh or tofu. I kept it simple today. P.S. Feel free to double the sauce recipe because it makes about one large serving or enough for two.

A quick and easy Spicy Almond Butter Noodle recipe. Vegan, gluten-free, oil free and comes together in about 10 minutes or less.

Ingredients 

  • 1 serving of rice noodles or other noodle of choice
  • sauce
  • 1/4 cup creamy almond butter use one without added oil/sugar
  • 1 tbsp tamari coconut aminos or other (if using tamari, omit the sweetener below)
  • 2 tbsp lime juice
  • 1 tbsp date syrup or maple syrup
  • 1 tbsp rice wine vinegar
  • 2-3 tbsp water
  • 1 tsp grated ginger or powder ginger
  • 1 tsp garlic powder
  • optional
  • 1 tsp dried chili flakes
  • 1 tsp sesame seeds to top
  • green onion to garnish
  • 1 tsp toasted sesame oil

Instructions 

  • Prepare noodles as directed.
  • Whisk together all sauce ingredients in a small bowl until emulsified. Adjust the consistency as desired by adding additional water.
  • Pour sauce over noodles and toss to combine.

  1. This sauce is the best, spicy-gingery-almond-buttery thing ever! I found this recipe and knew I immediately needed to adapt it into a salad dressing. It's now my go-to dressing and rivals all the oil-based ones I used to make. I'm so glad I found this version, that's more aligned with the way I try to eat. I bet it tastes delicious with noodles, but I definitely recommend adding a little extra water and turning it into a salad dressing. You won't regret it!
