Just got home & hangry, but craving something healthy? No time to cook and need something you can set and forget? Cooking for more than one hungry human? This Easy Vegan Sheet Pan Roast is for you. It’s comforting, nutritious, healthy and most importantly, easy to throw together. This recipe is vegan, gluten free and oil free.

This is a quick, but complete & nutritious meal that only requires chopping and tossing into the oven. You get your plant protein, carbohydrates and vibrant veg in all at once, and you can serve it atop a salad, your favourite warm grains or use it in a nourish bowl. Or, just eat it as is! The best part is that you can rotate the veggies for similar swaps, so if you’re missing an ingredient or want to stick to something more seasonal, you can pick a veggie from the same family instead!

Another way you can get creative is by playing around with your spices. You can choose to keep it simple or you can play with combos to make it smokier or spicier. I’m giving you my base recipe but the possibilities are endless. I’ll list some veggie alternatives as well as spice suggestions in the recipe notes below.

I usually like to roast my veggies sans oil and using a nonstick baking mat, but you’re welcome to use oil if preferred of course! I use this nonstick baking mat for most of my oil-free baking and roasting needs.

Easy Vegan Sheet Pan Roast (gluten-free, oil free)

Description

An easy and quick but healthy and nutritious sheet pan meal. A nourishing dish made with a balanced combination of plant protein, carbs and lots of flavour.

Ingredients

Veggies

  • 1 small red onion
  • 2 cups sweet potatoes (about 34 small potatoes)
  • 1 can chickpeas, drained and rinsed
  • 1 cups white potato, diced
  • 23 cloves garlic, quartered

Spices

  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary

Instructions

  1. Preheat your oven to 400F while you prepare your veggies.
  2. Dice your veggies into 1-inch cubes, and add into a large mixing bowl along with spices. Toss until evenly coated.
  3. Transfer veggies to a parchment paper lined baking tray, or a nonstick silicon baking mat, and roast for about 20 minutes. Flip and cook for an additional 15 minutes, or until veggies are fork tender.

Notes

  • Sweet potato can be swapped out for butternut squash, pumpkin, or other root vegetable.
  • Chickpeas can be swapped out for beans of choice.
  • White potato can be swapped out for cauliflower.
  • Other spice blend recommendations include chipotle (add chipotle powder and additional garlic powder), curry (add garam masala, cumin, turmeric, or favourite curry spices) etc.
