Ever since I started recipe testing Lemon Poppyseed Muffins in my kitchen, I’ve been hooked on citrus and everything lemon poppyseed. Now that we’re in prime oatmeal season, I knew that oatmeal was the next thing I needed to lemon poppyseed-ify but for some odd reason, I haven’t been craving oats unless we’re talking baked oats, so I thought why not do it all at once? And here we are. Baked Lemon Poppyseed Oatmeal!
Baking your oats gives it a really nice golden brown topping and more of a cakey texture, plus it’s just fun to scoop things out of a mug sometimes right? Or is it just me… Anyways, this is a one bowl, or should I say mug, recipe and is super simple to make! As always, sweetness and lemony-ness is customizable so go hard on the maple or the lemon as you see fit. The beauty of vegan meals is you can always taste them before cooking because there aren’t many ingredients that aren’t safe raw.
A quick, one bowl recipe for a warm and citrusy baked lemon poppyseed oatmeal. Vegan, gluten free, oil-free and super easy!
1/3 cup non-dairy milk
1/2 cup rolled oats (certified GF)
1/4 cup unsweetened non-dairy yogurt (can sub with additional non-dairy milk or applesauce)*
3–4 tbsp freshly squeezed lemon juice
1 flax egg (1 tbsp water + 2 tbsp flax egg)
2 tbsp maple syrup or sweetener of choice
2 tsp poppy seeds
1/2 tsp vanilla extract
pinch of salt
pinch of lemon zest (optional)
Preheat oven to 350F while you prep your ingredients
Combine everything in an oven safe bowl and mix to combine. Taste test to ensure its sweet/citrusy enough for you. The texture should be thick, but moist (see this video for reference). Adjust with additional non-dairy milk as needed.
Bake for 30 minutes, or until top is golden brown and baked. Enjoy!
