Hey friends! Today I’m sharing my oil free roasted garlic method that requires no oil (obviously), and no aluminum foil. I used to religiously use aluminum foil when roasting my garlic, but happened to run out of it and desperately needed to roast some garlic for a recipe. I experimented with a new method and it has actually become my go to because I love that it requires zero foil! Since garlic has such a strong aroma, you can likely not reuse foil used to roast garlic, so this method will save you some aluminum while still delivering all the roasted garlic goodness.
To make, cut along the top of the garlic bulb in order to create a flat surface. As you can see, mine has sprouted but since I have no other garlic in the kitchen right now, we’re working with it!
Next, lay your garlic flat side down on a baking sheet lined with parchment paper or my personal preference, a silicone baking mat (also zero waste, as it’s reusable AF!).
Roast garlic at 375F for 40 minutes total, flipping at the halfway point.
Remove from the oven and allow to cool for 10-15 min in an airtight container. I used a small mason jar, but I recommend placing the lid on top, and not screwing it shut in order to avoid pressure build up. This mimics the effect that wrapping in foil usually has.
After you allow it to sit in the jar, remove, peel skins and enjoy your roasted garlic!
