I recently shared 2 healthy breakfast recipes in partnership with Bob’s Red Mill! I used 2 of their alternative gluten free flours (teff flour and garbanzo & fava flour) to make a vegan quiche and teff pancakes.

– 1 cup nondairy milk
– 1 cup teff flour
– 1 flax egg (2 tbsp ground flax + 4 tbsp water)
– 2 teaspoons date sugar, or sweetener of choice
– 1 teaspoon vanilla extract
– 1 teaspoon cinnamon
– pinch of salt
Combine dry ingredients in a bowl, then add your liquid and combine until smooth. Make as you would regular pancakes, cooking one side until bubbles form and then flipping to cook for another 1-2 minutes on the other side. Top with chopped apples warmed in a pan with cinnamon and date sugar!
– 1 1/2 cups of chickpea and fava flour
– 1 cup water
– 2 teaspoons of black salt (kala namak) or regular salt
– 2 tablespoons nutritional yeast
– 1 teaspoon black pepper
– 1 cup of mixed veggies of choice
– 2 cloves minced garlic
– half of a large onion, sliced
– 1 teaspoon of chopped sage
– 1 teaspoon chopped thyme
Sautee your onion, garlic and veggies in a pan with your herbs and evenly distribute this mixture into your baking dishes. Combine your flour, water, nutritional yeast in a bowl until it forms a fine batter and pour over the veggie mixtures. Let sit or tap down to release any bubbles, or even give it a little stir in the pans. Bake at 450F for about 20-30 minutes (bake time will vary based on size of pans you use) and until a fork or chopstick come out clean!
