In case you haven’t noticed, cauliflower in smoothies is trending and though it sounds a little funky, cauliflower actually has a really mild flavour and adds texture and creaminess to smoothies with less sugar than bananas or yogurts. It’s a great substitute if you’re avoiding bananas or are not a fan of them in smoothies, and great for lowering the sugar content of your smoothies a little while still getting in your veggies.

Because cauliflower is a little tougher than fruit, I used to have to buy heads of cauliflower and prep them in advance to add to smoothies. Normally I’d chop them up into small pieces to make it easier for my blender to break down, then toss in the freezer until use. Enter Earthbound Farm‘s new riced cauliflower packs. Of course you can use these riced veggie packs for savoury dishes, but did you know they are actually really convenient for sneaking veggies into your smoothies?

You can toss the entire pack into the microwave to steam and prepare it to eat within minutes, but what I like to do is throw the whole bag into the freezer, and the broken down pieces blend really easily into my smoothies. If you’re sensitive to cruciferous veggies or raw cauliflower, I’d recommend microwave-steaming it and then tossing it into the freezer before use however raw works just as well and surprisingly doesn’t have much effect on the flavour of the smoothie (don’t be scared!). You can add more cauliflower or more sweetener and adjust the recipe as you go. When I first started adding cauliflower, I added really small amounts, whereas now I usually increase my cauliflower to fruit ratio.

Here’s a quick cauli-smoothie recipe to get you started:

INGREDIENTS – Makes 1 Smoothie Bowl
3/4 cup unsweetened non-dairy milk
1 frozen banana
1/2 cup frozen Earthbound Farm riced cauliflower
1/2 cup frozen blueberries
1/4 of a vanilla bean or 1/2 tsp vanilla powder
1/2 teaspoon maca powder (optional)
1 scoop blue majik spirulina (optional)
To prepare your ingredients, either toss your raw riced cauliflower into the freezer, or microwave-steam it then toss it into the freezer.
Add all your ingredients to a high speed blender and blend until smooth. If you prefer a runnier smoothie, add more non-dairy milk.
Adjust the sweetness to your liking by adding more or less cauliflower. Optionally, you can remove the banana too and sub for more berries, or cauliflower!
