I might have the biggest sweet tooth in NYC…or the world so making my sweet treats healthy 1) gives me more excuse to eat them 2) makes them better for me. Typically, I go for a really quick rawnola (just pulsing medjool dates with oats in a blender) but when I have a little more time, I make bliss balls, and each time I do I try to make a new flavour based on what I have on hand at the time.

Since I have been drinking tons of lemon water lately (skin + immunity water recipe coming to ya soon!), I was inspired to make lemon flavoured bliss balls and to get a brighter colour, I added some turmeric and edible marigold petals. Once I added the turmeric, I couldn’t help but add some other superfood and healing ingredients and to top it off I rolled them in coconut. These last well in the fridge for a few days or you can freeze them and thaw before eating–if you have any leftover that is. I store mine in a reusable ziploc bag by Stasher which is also freezer safe and a zero waste way to save your food.

RECIPE
6 large medjool dates–pitted
1/3 cup rolled oats or buckwheat groats
1/4 cup raw cashews
2 tablespoons of lemon juice
1 teaspoon vanilla extract
1/2 teaspoon turmeric ground (or more if you like!)
1/2 teaspoon maca
pinch of lemon zest

1/4 cup of desiccated coconut + edible flower petals to coat

First make your flour by blending/processing your oats or buckwheat groats to form a fine flour.
Add the remaining ingredients to your blender or processor and pulse until all ingredients are well combined and form a dough consistency, sticking together and pulling away from the edges of your appliance.
If your mixture is too moist, add more flour, or add desiccated coconut. If the mixture is too dry, add a date or two more.
Roll into small balls, then toss into desiccated coconut + flower mixture.
Refrigerate to firm up for about 10 minutes or so if you are feeling patient 😉
